My wife and I are going to Italy next year, so we've been doing some planning. I have lived in Europe before, but Uncle Sam was MY landlord at the time. I occasionally stayed "on the economy" but generally in a hotel (there was a great one run by the Salvation Army in London in the 80's) and the friendly neighborhood gasthaus.
However, those things were expensive, although they worked well for a short vacation.
This time, my wife and I hope to stay in Europe for a month or more, and the hotel bill for that could be astronomical!
There's three basic ways around that: stay in the cheapest dump you can find or find a friend who lives there and bunk in with them.
Another good way is to rent an apartment or home for a short term. Not only do you get the accomodations, but you can prepare your own meals...anouther money saver. You also get to have neighbors and go to the local shops over a period of time and actually get to know the country.
Here's a nice little article on doing a vacation rental rather than a hotel.

Seven Reasons for Choosing Vacation Rentals Vs Hotels
By Marie R. Ferguson
Why rent a vacation home?
Vacation homes are just that! Homes with plenty of space. It feels familiar with all the essentials of home and more. It's a place to relax, to hang out with your family and friends. They offer more choices than staying at a hotel. Shall we eat in? or go out to eat tonight? Yes, they have it all. Two families staying together can share the cooking, stay up late playing cards while the kids bunk with each other and enjoy the sleep over.
There's plenty of fun things to do. For example, you can hang out and play games all day, watch movies together, sit by the fire, or enjoy their jacuzzi, pool, or sauna. Build a bonfire, dance under the stars and share stories.
Most vacation homes have in house laundry facilities, unlike a hotel. There's the internet and phone service which are always available. You'll have a private yard and/or community, to entertain your family. Cook on the grill and share recipes.
Vacation rentals are typically less expensive than hotel rooms because you can share the fees, but the accommodations can be so much more than a hotel room. Families who share the costs, save money and still have more room to spread out, than if they were to rent a room at a hotel.
And, what about location?
There are homes located right on the water with their own private beach. Or at the foot of the ski mountain with a chair lift just steps away. Most vacation homes are close to amusement parks, and the best entertainment areas. For those special events, look for a home close by, talk to the owner and make an offer if you think the price is too high. Some owners will welcome the opportunity when they have last minute vacancies. These rentals are all over the world, so you are never limited on where to go on vacation. Ask the owner to let you know what's going on in town the week you are booked. They will know the current events for their area and when asked, are usually enthusiastic about sharing it with you. Remember, owners want you to have a great time so you'll want to re-book the following year. And you may even get a better deal on return visits.
Whatever your vacation choice is, staying at a vacation home instead of a hotel, will give you more comfort, more options, more luxury and most of all more privacy to enjoy each other and your friends or family.
